Mushrooms, soft cheese spread (whatever type sounds good), fried pork skins (this
keeps filling "together"), any other ingredients (a little smoked salmon, green
onion, shrimp, crab, etc.)

Grind up pork skins in food processor (these can be used in place of bread crumbs in
most any recipe and kept frozed in a baggie). Add about 1/4 cup skins to cheese spread and
mix well. You can also add other ingredients at this time to suit your taste. Remove stem
from mushroom and fill with cheese mixture. Bake or broil until brown.
